Infinite Roots Acquires Bosque Foods and Brings Mycelium Expertise Under One Roof

The biotech company Infinite Roots has acquired Bosque Foods. Through this acquisition, the company is integrating Bosque’s expertise in solid-state fermentation and the development of whole-cut products into its existing mycelium platform.

According to the company, the acquisition combines two complementary fermentation approaches: submerged fermentation for the scalable production of biomass, and solid-state fermentation for more structured texture architectures. This enables Infinite Roots to expand its IP-protected technology stack across various mycelium formats. The company states that this will broaden the range of products it can develop and scale, both internally and in collaboration with industry partners.

Process data and IP as a strategic core

Bosque’s data sets and process expertise are set to complement Infinite Roots’ existing work in the areas of fermentation scaling, data science and intellectual property. The company states that this integration will deepen understanding of texture formation, shorten R&D cycles and bring product formats closer to industrial maturity.

For us, the key question was where this work would have the greatest potential for future growth. Infinite Roots offers a broader industrial platform on which Bosque’s technology can continue to create value and contribute to the next phase of the category.”

From proof of concept to industrial-scale production

As the mycelium sector matures, the competitive advantage is shifting from early-stage proof of concept towards repeatable industrial implementation. Infinite Roots is positioning itself as one of the few European platforms with an integrated technological foundation spanning the entire value chain, from raw material upcycling through fermentation and texturisation to future avenues for co-development, production and licensing.

Infinite Roots was founded in 2018 and, according to the company, employs more than 60 experts in biotechnology, data science, food science and culinary arts. The company markets its mushroom-based products under the consumer brand MushRoots.

No financial details regarding the acquisition of Bosque Foods have been disclosed.
